Tropical Coconut Pineapple Smoothie

This smoothie can be made at any time during the year to remind you of your last Hawaii vacation or the Caribbean cruise you took during the summer. It is not only exotic, but also very nutritious.

As always, you can adjust the amounts to your personal liking. Use fresh, ripe pineapple whenever you can. 


Ingredients:
  • 1 large pineapple, chopped
  • 1 cup coconut milk
  • 1 cup coconut water
  • 1 banana
  • 1 Tbsp of raw coconut flakes for an extra crunch and flavor (optional)
  • 1/3 cup raw protein powder for optimal nutrition
  • pinch Celtic salt
  • pinch saffron
  • 3-5 ice cubes (optional if you are using fresh fruit)
Method:
  • Soak the saffron threads in a small amount of warm water.
  • Peel the pineapple and cut it into small chunks. 
  • Peel the banana and cut into thick slices.
  • Combine all ingredients, except the saffron, in a blender and blend in a high speed gear until smooth.
  • Add saffron and mix gently.
  • Pour smoothie into tall glasses  and decorate with a a slice of pineapple. Enjoy in good company!


If you happen to buy pineapple that isn't quite yet ripe, simply wait for two or three days. Ripe fruits are more nutritious and simply taste better. You definitely want your smoothie to taste divine. 
 
I added saffron not only for a "dramatically" colorful effect, but most importantly, for its antioxidant properties.

Saffron contains a number of carotenoids that are believed to be responsible for a number of saffron’s health benefits. Among others, saffron has the capacity to inhibit skin tumors, alleviate arthritic conditions and improve eye health. Saffron has been reported to significantly improve vision in patients with cataracts.

Saffron contains the compound crocin that is considered to be the primary compound responsible for recent study results which found that saffron promotes learning, memory retention, and recall capacity.
